This decadent pie is everything I love in a dessert…Peanut Butter, and No Bake!
This scrumptious recipe was made with my good ol’ sis Sarah, you will probably see her guest cooking with me now and then on the blog
La Pie Innards:
8 oz bag of your favorite chocolate cookies
4 Tbsp melted butter
1/2 cup melted semi sweet chocolate chips
1 cup heavy whipping cream
1 cup powdered sugar
14oz can of sweetened condensed milk
1 tsp vanilla extract
1 tsp fresh squeezed lemon juice
chopped peanuts and extra melted chocolate for garnish if desired
How To Make La Crust:
1. Put the bag of cookies into a food processor or blender and chop them into fine crumbs.
2. Combine the cookie crumbs with the melted butter in a small bowl using a fork.
3. Press the cookie mixture into your pie pan and up the sides
4. Melt the chocolate chips either in a double boiler or in the microwave.
5. Spread the melted chocolate over the cookie pie crust. Note – try to keep the layer of chocolate thin or it will become too thick and hard when it sets in the fridge.
6. Place your pie pan in the fridge while you make the pie filling.
How To Make La Pie:
1. Beat the heavy whipping cream in a bowl until stiff peaks form and place in the fridge.
2. Beat the cream cheese and the peanut butter in a deep bowl until well mixed.
3. Mix in the powdered sugar in portions.
4. Add the condensed milk, vanilla, and lemon juice to peanut butter mixture and beat until well combined.
5. Get the whipped cream out of the fridge and gently fold it into the peanut butter until well combined.
6. Pour the peanut butter filling onto the chocolate crust in your pie pan.
7. Smooth out the filling…see it looks super yummy even without any toppings!!
8. If desired sprinkle about a handful of chopped peanuts on top.
9. Also optional, melt extra chocolate chips and drizzle over the pie.
10. Refrigerate for at least 3 hours, overnight is best, and serve!
